3 Ingredient Pancake

As I was deciding on what to make for dinner, I remembered a super quick and easy recipe that I’d seen a few times on Facebook and on a few websites with different variations of the recipe as this one on The Skinny Confidential

So here I was Ubër excited to be trying this Infamous Pancake that only required 1 Bananna, 2 Eggs, and a Dash of Cinnamon! Wait, No Carbs? No Guilt of feeling like I’m cheating myself from all of the Hard work I’ve been putting in lately at that gym…AND it’s filled with protein?! Heck YES, I was Sold! 
Pulled out the little ingredients I had in my kitchen (because of course I had all THREE of them you know) and got to work smashing the bananas in a bowl with the 2 eggs….

After mashing the bananas enough so there weren’t any huge chunks, then it was time for to get one of these bad boys in a pan. I knew this was going to be a “trial run” so 1 would be plenty for me…

  
It definitely cooked nicely like a pancake should. Time to flip…

So here’s where it gets super honest….

It definitely LOOKED exactly how I’ve seen a lot of them turn out and I’m sure if I’d added additional fruit or even cheated with adding pinches of Flour where I’ve read some people do it would’ve looked even fluffier, but I wanted to stick to the Original 3 Ingredients and see how it turned out. 

I didn’t care for it at ALL. Everyone’s taste buds is different but it didn’t work for me. After 1 bite I was done (and just munched on the bacon, yummers!) It was like eating a sweet omelette which just seemed wrong on so many levels. I think if the recipe called for another large banana perhaps, it would’ve taken away the “Eggy Taste” and made it less Savory. Even with honey there was not enough banana taste and way too much egg. I’ll do another trial run using more bananas next time to see how it turns out. At least I can say I finally tried the 3 Ingredient Pancake! 

Monday Madness!

Started my day off looking into the bathroom mirror at the person staring back with the crazy hair and the one flexi rod that was in from the night before (when I got frustrated and totally gave up! Lol) 

Only had a few hours to figure out what I was going to do between dealing with life’s curve balls: A nagging back injury that doesn’t seem to go away & just lingers in that “Fml” stage, a jury duty summons that made me regret ever being a voter (oook, I guess that was a little too harsh but who actually LIKES jury duty?!) and lastly the rats nest sitting on my head. I had to think…Quick.

Finished the other Flexi Rods and just went to work, aside from a few confusing moments that is. Lol. I made it on time for everything and put on a brave face! Couldn’t wait to get home and relax though…sheesh!! What a day!
